How to differentiate natural kvass from the kvass-flavoured drinks
Most of the kvass-flavoured drinks sold in Estonia are not naturally fermented by their nature. They are made of syrup, aroma and flavourings.
Why natural kvass is good for you
Natural kvass contains B vitamins, which are good for the skin, nervesystem and heart. It also contains minerals like gallium, which protects against high blood pressure. Kvass, unlike the other soft drinks, contains amino acids and proteins.
The process of fermentation
Natural kvass can never be made without fermentation. Alcohol occurs as a result of fermentation. The sugar content also decreases making the naturally brewed kvass significantly lower in calories than an average soft drink.
To produce natural kvass malt needs to be fermented. Every fermentation process leaves behind a small amount of alcohol, which does not make this 0,5 % natural kvass a alcoholic drink. For example the alcohol content in kefir can be up to 1,2 % and the legendary kvass from yellow barrels, we remember contained even 2 %. Therefore natural kvass in by no means alcohol.
